Apricot-Almond Breakfast Bars

Perfect for all the non-morning people out there... Easy, make-ahead friendly apricot-almond breakfast bars. ☀️


  • 2 1/4 cups whole grain oats
  • 1/3 cup roughly chopped almonds
  • 2 tablespoons almond flour
  • 2 tablespoons maca powder
  • dash of salt
  • dash of cinnamon
  • 1/3 cup slightly warmed cashew butter
  • 2 tablespoons melted coconut oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons homemade almond milk
  • 1/3 cup dried apricots
  • 4 pitted dates⠀


  1. Preheat the oven to 350 degrees.
  2. Line an 8×8 baking square with parchment paper, lightly oil and set aside.⠀
  3. In a large mixing bowl add 2 1/4 cups lightly toasted whole grain oats, 1/3 cup lightly toasted and roughly chopped almonds, 2 tablespoons almond flour, 2 tablespoons maca powder, dash of salt, dash of cinnamon, 1/3 cup slightly warmed cashew butter, 2 tablespoons unflavored, melted coconut oil, 1/4 cup honey, 1 teaspoon vanilla extract and 2 tablespoons homemade almond milk, and mix well.⠀
  4. Fold in 1/3 cup roughly chopped, dried apricots and 4 pitted and roughly chopped dates.
  5. Pour the mixture into the prepared baking pan.⠀
  6. Use a small glass jar or glass press evenly down in the pan to flatten.⠀
  7. Place in the oven and bake until set, about 20 minutes.⠀
  8. Remove from the oven and allow to cool completely before slicing.⠀
  9. Store bars in the refrigerator.
