
Almond Joy Bites
Who loves Almond Joys? We do! We created our own healthy recipe that tastes pretty darn close to the real thing! Note that this recipe had no sugar, if you want it sweet you can add sugar into both the filling and the coating!
Ingredients
For the filling:
- 1/2 tsp salt
- 1/4 cup coconut pulp
- 1 tbsp coconut oil
- 1 cup almonds (soaked)
- Sweetener to taste
For the chocolate coating:
- 1 tbsp coconut oil
- 1/2 cup chocolate chips of choice (we use Lily's)
Directions
For the filling:
Combine everything in a food processor and process until smooth. Line a baking sheet with parchment paper. Roll the dough into balls and place them in the fridge for 15 minutes to harden.
For the chocolate coating:
Melt the chocolate chips and coconut oil. Remove from heat and let sit for 7 minutes to cool.
Take the balls out of the fridge and roll them in the chocolate. I keep the melted chocolate in the double boiler and take a spoon and pop one in there and roll it over until the chocolate had covered it.
After you have dunked all of the balls into the chocolate, you can top with more coconut pulp if you like. Place them back on the parchment paper and let them harden in the fridge for 20 minutes.
*Note: the only sugar in this recipe was the stevia from the chocolate we used. If you want it sweeter feel free to add your sweetener of choice while you are processing your pulps in the food processor!
