Almond Pulp Coconut Cookies
Ingredients
- 1 1/2 cups of almond pulp⠀
- 1/2 cup of pitted dates⠀
- 2 Tbsp of maple syrup⠀
- 1/2 tsp of baking powder⠀
- a sprinkle of salt⠀
- 1/2 cup of shredded coconut⠀
- 1/4 cup of coconut oil⠀
- 1 tsp of cinnamon⠀
Directions
- In a food processor, blend 1 1/2 cups of almond pulp, 1/2 cup of pitted dates, 2 Tbsp of maple syrup, 1/2 tsp of baking powder, a sprinkle of salt, 1/2 cup of shredded coconut, 1/4 cup of coconut oil, and 1 tsp of cinnamon until a dough consistency forms.
- Roll into balls and place on a cookie sheet.
- Bake at 300˚F for 35-40 minutes until golden brown on the bottom!
