- 1. In a large bowl, mix:
- 1/2 C buckwheat flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 2.In a medium bowl, mix:
- 1 egg, beaten
- 1 ripe banana, mashed
- 1/4 C almond milk (used @elliesbest nut milk bag)
- 1 TB melted coconut oil
3. Add wet ingredients to dry. Still till combined.
4.Heat 1 tsp of coconut oil in a skillet over medium heat.
5. Spoon 2 heaping TB of batter for each pancake. Flip when bubbles form.
6.Top with sautéed peaches + maple syrup + cinnamon
